Low Carb Pizza!!!


About four months ago my husband and I began a Low Carb Diet. My husband had done it years ago and lost a lot of weight. I had never done it before, but my friend who follows a low carb diet swore by it. So I decided to try it. It was tough. Those first two weeks were really brutal for me. I felt so deprived. I decided I needed to find ways to satisfy my cravings instead of just ignoring them. One afternoon I wanted pizza. I had remembered I had seen some low carb tortillas at Target recently and suddenly a light bulb went on. I ran down to the store, bought those low carb tortillas and created this very simple and satisfying recipe. I was so happy with it that I made it again for dinner that night. My husband was skeptical at first, but was pleasantly surprised at how well they turned out. He now requests them regularly for dinner!!! This is hardly a recipe, as it is just so simple to put together. But, I wanted to share it to help anyone who is doing a low carb diet find friendly alternatives to the foods they miss =)


Low Carb Tortillas (We use the Mission Tortilla brand)

Jar or homemade pizza sauce (be careful as pizza sauce naturally has carbs. Choose the one with the least amount of sugar and carbs)

Shredded Mozzarella cheese (We shred our own since pre-shredded cheese has added potato starch)

Any pizza toppings you like

*Note: If you will be using any meat toppings, make sure they are fully cooked before adding to the pizza. These pizza’s are not in the oven long enough to cook through. 

Pre heat your oven to 425 degrees. Lay out the tortillas on a backing sheet and prick the tortillas on both sides with a fork. They goal is to prevent the tortillas from puffing up like a pillow when in the oven. Place them in the oven for 8-10 minutes until they are crisp and just turning brown around the edges. Remove them and add the pizza sauce, shredded cheese and toppings. Place back in the oven for 5-7 minutes until the cheese is melted and toppings are warmed through. Remove them from the oven and let them sit for a minute. Cut into quarters and Enjoy!
