Crock Pot Chicken & Artichokes

For the month of October I am taking part in a Crocktober collab with YouTube Mommy Meetup on YouTube. Each day during the month of October a member of the group is posting a new crockpot recipe.

My day to post is here and I choose my Crock Pot Chicken with Artichokes. I came up with this recipe a few years ago. It has been a favorite in our house ever since. It is so simple, but so delicious. Here is the recipe…

Ingredients:

8-10 chicken thighs

1 can Artichoke hearts, drained

1  12oz bottle of Lawry’s Herb & Garlic with Lemon Juice Marinade

5 Carrots, peeled and cut in thirds.

Cooked Rice

Add the chicken to the crock pot and add the rest of the ingredients. Cook on low for 8 hours. When ready, serve over rice.

This also makes a fantastic freezer meal. All you need to do is put all of the ingredients into a gallon size freezer zip lock bag. Lay flat in your freezer to freeze. When your ready to cook it, take it out of the freezer the night before and thaw in the fridge, put it in your crock pot and cook. It couldn’t be any simpler.
